Choosing the wrong fridge for a commercial kitchen is an expensive mistake. Too small and staff overload it; too weak for UAE heat and it struggles every summer; wrong type and it slows the whole line. This guide explains each type of commercial refrigeration equipment, what to check before you buy, and typical setups for restaurants, cafés, hotels and central kitchens in the UAE.

Types of commercial refrigeration equipment

Upright chillers and stainless steel refrigerators

Upright stainless steel chillers are the main storage fridge in most kitchens, used for vegetables, dairy, sauces and prepared food. The most common sizes are 1-door (about 700 L) and 2-door (about 1,400 L). Choose GN 2/1 compatible models so standard gastronorm trays slide straight in.

Commercial freezers and deep freezers

Commercial freezers store meat, seafood, frozen fries and prepared items at −18°C or below. Upright freezers save floor space; counter freezers keep frozen items next to the fryer or grill.

Undercounter chillers and refrigerated counters

Undercounter chillers give you cold storage and a worktop in one unit. They come with 1 to 4 doors or drawers and sit along the cooking line so chefs don't walk to the main fridge during service. Worktop counters give you a full prep surface, and low boy counters are lower units designed to hold griddles and char-grills on top.

Saladettes and pizza prep counters

Saladettes and pizza preparation counters hold toppings in chilled GN containers on top, with refrigerated storage below. They are standard in pizza, sandwich, burger and salad kitchens.

Refrigerated display counters and cake displays

Refrigerated display counters keep products cold while customers see them. Cafés and bakeries use cake display chillers; dessert shops use ice cream display freezers.

Beverage coolers and bar fridges

Beverage coolers and bar coolers have glass doors and LED lighting to display drinks. Back-bar models fit under the counter in hotel bars and lounges.

Blast chillers and blast freezers

Blast chillers cool cooked food from about +70°C to +3°C within 90 minutes, which stops bacteria growing in the danger zone. Blast freezers take food down to −18°C, usually within about 4 hours. Most modern units do both. They are essential for hotels, banqueting, bakeries and central kitchens that cook in advance.

Walk-in cold rooms and walk-in freezers

Walk-in cold rooms are built to your measurements for bulk storage. Hotels and central kitchens usually need at least one chiller room and one freezer room, often sharing a wall to save space and energy.

7 things to check before you buy

1. Climate class for UAE heat

This is the most important point for UAE kitchens. Every commercial fridge has a climate class showing the room temperature it is designed for. Kitchens in Dubai, Sharjah and Abu Dhabi often reach 35–40°C near cooking lines, especially in summer. Choose units rated climate class 5 (40°C ambient) for hot kitchens. A unit rated for 32°C will run non-stop, use more electricity and wear out early.

2. Capacity

List what you store and how often deliveries arrive. If you get fresh produce daily, you need less space than a kitchen that orders twice a week. As a rule, buy for your busiest day, not your average day, and leave about 20% spare space so cold air can circulate.

3. Temperature range

Chillers should hold food at 0°C to +5°C and freezers at −18°C or below, which is what UAE food safety inspectors check. Look for a clear digital display, a door alarm and automatic defrost.

4. Stainless steel quality

For food contact and daily cleaning, AISI 304 stainless steel inside and out is the standard. Cheaper units use 201 grade or painted steel, which rusts faster in humid UAE conditions. Rounded inside corners and removable shelves make cleaning and inspections easier.

5. Energy use and refrigerant

Refrigeration runs 24 hours a day, so efficiency matters. Units using natural refrigerants such as R290 are more efficient and environmentally friendly. Thick insulation, good door gaskets and self-closing doors also reduce running costs.

6. Space and ventilation

Measure the space, the door swing and the route into the kitchen, including doors and lifts. Most units need 5–10 cm of free space around the condenser to release heat. Never place a fridge right next to a fryer, oven or grill without a gap.

7. Service and spare parts in the UAE

A fridge that breaks during service costs you food and sales. Buy from a supplier with a local service team and spare parts stock in the UAE, and check the warranty terms before you order.

Example refrigeration setups

These are typical starting points. Your menu, delivery schedule and kitchen size change the final list, so treat them as a guide, not a fixed rule.

Café (20–30 seats)

One 2-door undercounter chiller behind the counter, one glass-door beverage cooler, and one cake display chiller at the front. Add a 1-door upright freezer if you serve frozen desserts or ready meals.

Restaurant (around 50 seats)

One 2-door upright chiller and one 1-door upright freezer in the store area, a 3-door counter chiller along the cooking line, and a saladette or pizza prep counter at the cold station.

Hotel kitchen

Separate walk-in cold rooms for meat, vegetables and dairy, plus a walk-in freezer. Each section (hot kitchen, pastry, garde manger, banqueting) has its own upright units and counter chillers, and banqueting uses a blast chiller to cook ahead safely. Bars and room service need their own beverage coolers.

Central kitchen or catering company

Large walk-in chiller and freezer rooms, several blast chillers and blast freezers sized to daily production, and multi-door upright units for finished food waiting for dispatch.
